Beef Tacos with Lemon Slaw

For the Beef:

1 lb ground beef (preferably grass-fed)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon Worcestershire sauce

1/4 cup beef broth (or water)

For the Lemon Slaw:

2 cups green cabbage, thinly shredded

1 cup red cabbage, thinly shredded

1 carrot, grated

1/2 cup fresh cilantro, chopped

Zest and juice of 1 lemon

2 tablespoons olive oil

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Optional toppings: sliced avocado, jalapeños, sour cream, lime wedges

Instructions
 

Cook the Beef:

    - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.

      - Stir in the minced garlic and cook for an additional minute until fragrant.

        - Add the ground beef and break it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

          - Sprinkle in the cumin, chili powder, smoked paprika, salt, and pepper. Stir to combine.

            - Pour in the Worcestershire sauce and beef broth. Simmer for 5 minutes until the liquid is reduced slightly. Set aside.

              Prepare the Lemon Slaw:

                - In a large mixing bowl, combine the green cabbage, red cabbage, grated carrot, and cilantro.

                  - In a small bowl, whisk together the lemon zest, lemon juice, olive oil, salt, and pepper. Pour this dressing over the cabbage mixture and toss until well coated. Let it sit for about 10 minutes to allow flavors to meld.

                    Warm the Tortillas:

                      - In a dry skillet or directly over an open flame, warm the tortillas for about 30 seconds on each side until soft and pliable.

                        Assemble the Tacos:
