Baked Waffle Sandwiches

2 cups all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

2 large eggs

1 3/4 cups milk

1/2 cup vegetable oil

1 tsp vanilla extract

1 cup shredded cheese (cheddar or gouda works well)

1 cup cooked and crumbled bacon or diced ham

1/2 cup chopped green onions (optional)

2 tbsp butter, melted (for brushing)

Optional toppings: maple syrup, hot sauce, or your favorite aioli

Preheat the Oven: Start by preheating your oven to 200°F (95°C) to keep the waffles warm after baking.

    Make the Waffle Batter: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined; a few lumps are okay.

      Prepare the Waffle Iron: Preheat your waffle iron according to your manufacturer's instructions.

        Cook the Waffles: Lightly grease the waffle iron with cooking spray or brush it with a little melted butter. Pour an appropriate amount of batter onto the hot waffle iron (typically about 1/2 to 3/4 cup, depending on the size of your iron) and close the lid. Cook until golden brown and crispy, usually around 4-5 minutes. Once cooked, transfer the waffles to a baking sheet and keep them warm in the preheated oven. Repeat until all batter is used.

          Assemble the Sandwiches: Take two waffles, and on one waffle, sprinkle a generous layer of shredded cheese, followed by the crumbled bacon or diced ham, and some chopped green onions if desired. Place another waffle on top to create a sandwich.

            Bake the Sandwiches: Brush the top of each assembled sandwich with melted butter, then place them on a baking sheet. Bake in the preheated oven for about 10 minutes or until the cheese is melted and the edges are slightly crispy.

              Serve: Remove the sandwich from the oven, slice if desired, and serve warm with optional toppings like maple syrup, hot sauce, or aioli for dipping.
