Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1/2 cup cream cheese, softened

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1/2 cup black beans, drained and rinsed

1/4 cup fresh cilantro, chopped (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

12 small flour tortillas

Cooking spray

Optional toppings: salsa, guacamole, sour cream

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cream cheese, ranch dressing, shredded cheddar cheese, black beans, cilantro (if using), garlic powder, onion powder, smoked paprika, and cayenne pepper. Mix until all ingredients are thoroughly combined.

Assemble the Taquitos: Warm the flour tortillas in the microwave for about 15-20 seconds, just until they are pliable. Spoon about 2-3 tablespoons of the chicken filling onto the lower third of each tortilla. Roll it up tightly, folding in the sides as you go. Place the rolled taquito seam-side down on the prepared baking sheet.

Spray and Bake: Once all taquitos are assembled, lightly spray the tops with cooking spray to ensure they get crispy. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.

Serve: Once baked, remove the taquitos from the oven and let them cool for a few minutes. Serve with your favorite dipping sauces like salsa, guacamole, or sour cream.
