Baked Cheesy Chicken Quesadilla Cups

2 cups cooked chicken, shredded

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cream cheese, softened

1/2 cup black beans, drained and rinsed

1/2 cup corn (frozen or canned)

1/4 cup fresh cilantro, chopped

1 tsp garlic powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

12 small flour tortillas

Cooking spray

Salsa and sour cream, for serving

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C) and spray a muffin tin with cooking spray to prevent sticking.

    Prepare the filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, cream cheese, black beans, corn, cilantro, garlic powder, cumin, paprika, salt, and pepper. Stir until everything is evenly mixed and well-coated.

      Shape the tortillas: Take one flour tortilla and place it in the palm of your hand. Gently press your fingers to form a cup shape. Repeat this for all tortillas.

        Assemble the cups: Place each tortilla cup into the muffin tin slots. Fill each cup generously with the cheesy chicken mixture, pressing down slightly to ensure a good amount fits in each cup.

          Bake the cups: Once all cups are filled, place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the tortillas are golden brown and crispy, and the cheese is bubbly.

            Cool and serve: Remove from the oven and allow to cool slightly before removing the quesadilla cups from the muffin tin. Serve warm with salsa and sour cream on the side.
