Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 cup mixed vegetables (peas, carrots, corn)

1/2 cup diced cooked chicken or tofu (optional)

2 large eggs, beaten

3 tablespoons soy sauce

1 tablespoon oyster sauce (or vegetarian alternative)

1 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ground ginger

2 green onions, sliced

1/4 cup roasted peanuts or cashews, roughly chopped

Salt and pepper to taste

Fresh cilantro leaves (for garnish)

Instructions

Prepare Ingredients: If using day-old rice, break up any clumps with your fingers. Have all your ingredients ready before you start cooking for seamless preparation.

Heat the Pan: In a large non-stick skillet or wok, add 1 tablespoon of sesame oil and heat over medium-high heat until shimmering.

Cook Eggs: Pour the beaten eggs into the hot pan, swirling to form a thin layer. Cook for about 1-2 minutes until just set, then scramble gently until fully cooked. Remove the eggs from the pan and set aside.

Sauté Vegetables: In the same pan, add another tablespoon of sesame oil. Add the mixed vegetables and a pinch of salt and stir-fry for about 3-4 minutes until they are tender.

Combine Ingredients: Add the cooked rice to the pan, breaking up any remaining clumps. Stir-fry for about 3-4 minutes, making sure the rice is heated through and mixed with the vegetables.

Add Flavors: Pour in the soy sauce and oyster sauce. Sprinkle in the garlic powder and ground ginger. Toss everything together to coat the rice evenly. Allow it to cook for another 2-3 minutes.

Finish with Chicken/Tofu & Nuts: If using chicken or tofu, stir it into the rice mixture along with the scrambled eggs. Cook for an additional minute until everything is warmed through. Add the chopped nuts for a crunchy texture.

Garnish and Serve: Remove from heat and sprinkle sliced green onions and fresh cilantro over the fried rice. Adjust salt and pepper to taste.

Enjoy: Serve hot in bowls, and pack a portion in lunch boxes for school as a delicious treat!
