2 cups rolled oats

1 cup unsweetened applesauce

1 medium apple, finely chopped (preferably a sweet variety like Fuji or Honeycrisp)

1/2 cup raisins

1/4 cup honey or maple syrup (for a vegan option)

1/2 cup almond flour (or your choice of flour)

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, combine the applesauce, honey (or maple syrup), and vanilla extract. Mix well until fully integrated.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, almond flour, salt, cinnamon, and baking powder. If using, add in the chopped walnuts or pecans.

        Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, stirring until fully combined. Fold in the chopped apple and raisins until evenly distributed throughout the mixture.

          Transfer to Baking Pan: Pour the mixture into the prepared baking pan. Grease your hands or a spatula with a little cooking oil, then press the mixture firmly and evenly into the pan to ensure they hold together during baking.

            Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool and Cut: Allow the bars to cool in the pan for about 10 minutes. Use the parchment overhang to lift them out of the pan, then let them cool completely on a wire rack before cutting into squares or rectangles.

                Store: Once cooled, store the bars in an airtight container at room temperature for up to one week, or refrigerate for longer freshness.
