2 cups old-fashioned rolled oats

1 cup almond or cashew nuts, chopped

1/2 cup unsweetened coconut flakes

1/2 cup apple chips, crumbled

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup dried cranberries or raisins (optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, coconut flakes, crumbled apple chips, ground cinnamon, nutmeg, and salt. Mix until everything is evenly distributed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir well until all the dry ingredients are completely coated with the wet mixture.

          Form Clusters: Using your hands or a spatula, press the mixture tightly together to form clusters. You can make them as big or small as you like, but aim for about 1.5-inch clusters.

            Spread and Bake: Spread the clusters evenly on the prepared baking sheet, making sure to leave some space between them. Bake in the preheated oven for 20-25 minutes, or until golden brown, stirring halfway through to ensure even baking.

              Cool and Store: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. The clusters will become crisp as they cool. Once cool, break into pieces if needed, and mix in dried cranberries or raisins if desired.
