Apple Cinnamon Breakfast Quesadillas

2 large flour tortillas

2 medium apples (e.g., Granny Smith or Honeycrisp), peeled, cored, and diced

1 teaspoon ground cinnamon

2 tablespoons brown sugar

1 tablespoon lemon juice

1/2 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/4 cup chopped walnuts (optional)

Butter or cooking spray for cooking

Maple syrup for drizzling (optional)

Instructions
 

Prepare the Apples: In a medium bowl, combine the diced apples, ground cinnamon, brown sugar, and lemon juice. Mix well, ensuring the apples are coated evenly. Set aside to allow the flavors to meld.

    Make the Cheese Mixture: In a small bowl, mix the softened cream cheese with a pinch of cinnamon until smooth and creamy. Set this aside as well.

      Assemble the Quesadillas: Lay one tortilla flat on a clean surface. Spread half of the cream cheese mixture evenly over the tortilla. Then, sprinkle half of the shredded cheese over the cream cheese. Evenly distribute half of the cinnamon apple mixture and half of the chopped walnuts (if using) on top.

        Top and Prepare for Cooking: Place the second tortilla on top of the apple mixture and press gently to hold it in place.

          Cook the Quesadilla: Heat a large skillet or griddle over medium heat and add a little butter or cooking spray. Carefully place the assembled quesadilla in the skillet. Cook for 3-4 minutes on one side until golden brown and crispy.

            Flip and Cook the Other Side: Using a spatula, carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side until it’s also golden brown and the cheese has melted.

              Slice and Serve: Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve warm. Drizzle with maple syrup if desired for extra sweetness.
