Apple Cider Glazed Ham

1 whole bone-in ham (8-10 pounds)

2 cups apple cider

1/2 cup brown sugar

1/4 cup honey

1/4 cup Dijon mustard

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/2 teaspoon freshly grated nutmeg

2 tablespoons apple cider vinegar

1 tablespoon soy sauce

Fresh rosemary or thyme sprigs, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (165°C).

    Prepare the Ham: Place the ham on a rack in a roasting pan, cut side down. Score the surface in a diamond pattern, making shallow cuts about 1 inch apart.

      Make the Glaze: In a medium saucepan over medium heat, combine the apple cider, brown sugar, honey, Dijon mustard, cinnamon, cloves, nutmeg, apple cider vinegar, and soy sauce. Stir continuously until the sugar has dissolved and the mixture starts to simmer. Let it simmer for about 10-15 minutes until it thickens slightly.

        Glaze the Ham: Brush a generous amount of the glaze over the ham using a basting brush. Reserve some glaze for later basting.

          Roasting Time: Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for about 15 minutes per pound, which will take approximately 2 to 2.5 hours. Baste the ham every 30 minutes with the reserved glaze.

            Remove the Foil: In the last 30 minutes of cooking, remove the foil to allow the ham to brown and caramelize beautifully. Continue basting every 15 minutes.

              Check Temperature: The ham is done when it reaches an internal temperature of 140°F (60°C). Use a meat thermometer to check.

                Rest and Serve: Once the ham is done, take it out of the oven and let it rest for at least 15-20 minutes before slicing. Garnish with rosemary or thyme sprigs if desired, and serve warm.
