2 cups sharp cheddar cheese, shredded

2 medium apples (Granny Smith or Honeycrisp), thinly sliced

1 cup baby spinach leaves

½ cup walnuts, chopped (optional)

2 tablespoons honey

1 teaspoon Dijon mustard

Salt and pepper to taste

Cooking spray or a little olive oil for grilling

Prepare the Sauce: In a small bowl, mix the honey and Dijon mustard together. Set it aside for later.

    Layer the Ingredients: On each tortilla, spread an even layer of shredded cheddar cheese, leaving about an inch border around the edges.
