2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon unsalted butter, melted

1 package (1 lb) refrigerated pie crusts (or homemade)

1 egg (for egg wash)

1 tablespoon milk (for egg wash)

Optional: powdered sugar for dusting

Prepare the Filling:

    In a medium bowl, combine the diced apples, granulated sugar, cinnamon, lemon juice, and melted butter. Mix until the apples are well-coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

      Shape the Hand Pies:

        Roll out the pie crust on a lightly floured surface. Using a round cutter (about 5-6 inches in diameter), cut out circles from the pie crust. Gather the scraps and re-roll to make additional circles as needed.

          Fill the Pies:

            Spoon about 1-2 tablespoons of the apple filling onto the center of each pie crust circle. Be careful not to overfill, or they may burst during cooking.

              Seal the Hand Pies:

                Fold the crust over the filling to create a half-moon shape. Press the edges together firmly with your fingers, then use a fork to crimp the edges for a decorative seal.

                  Prepare the Egg Wash:

                    In a small bowl, whisk together the egg and milk. Brush this mixture over the tops of the hand pies to give them a golden color when cooked.

                      Preheat the Air Fryer:

                        Preheat your air fryer to 350°F (175°C) for about 5 minutes.

                          Air Fry the Hand Pies:
