Air Fried Turkey Zucchini Sliders

1 lb ground turkey

1 medium zucchini, grated and excess moisture squeezed out

1/4 cup breadcrumbs (whole wheat or gluten-free as needed)

1/4 cup grated Parmesan cheese

1 large egg

1 clove garlic, minced

1 tsp onion powder

1 tsp Italian seasoning

1/2 tsp smoked paprika

Salt and pepper to taste

Olive oil spray

Mini slider buns (or lettuce wraps for a low-carb option)

Optional toppings: sliced tomatoes, lettuce, avocado, or your favorite sauce (like aioli or tzatziki)

Instructions
 

Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel, twist, and squeeze to extract as much moisture as possible. This helps prevent soggy sliders.

    Mix Ingredients: In a large mixing bowl, combine the ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, Italian seasoning, smoked paprika, salt, and pepper. Mix until well combined but do not over-mix.

      Form Sliders: Divide the mixture into equal portions (about 2-3 tablespoons each) and shape them into small patties (sliders). You should have around 8 sliders.

        Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air Fry the Sliders: Lightly spray the air fryer basket with olive oil to prevent sticking. Place the sliders into the basket in a single layer, ensuring they don’t touch (you may need to do this in batches). Spray the tops lightly with olive oil. Cook for 10-12 minutes, flipping halfway through, until they are golden brown and reach an internal temperature of 165°F (74°C).

            Assemble Sliders: Once cooked, remove the sliders from the air fryer and let them rest for a minute. Place each slider on a mini bun or lettuce wrap and add your desired toppings.
