1 pound large shrimp, peeled and deveined

3 tablespoons honey

3 tablespoons soy sauce (low-sodium preferred)

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon sesame oil

1 tablespoon cornstarch

Salt and pepper to taste

For the Veggies:

1 cup bell peppers, sliced (any color)

1 cup broccoli florets

1 cup snap peas

1 tablespoon olive oil

Salt and pepper to taste

For Serving:

2 cups cooked jasmine or brown rice (for a healthier option)

2 tablespoons sesame seeds

2 green onions, sliced

Lime wedges for garnish (optional)

Instructions
 

Marinate the Shrimp: In a medium bowl, combine honey, soy sauce, minced garlic, grated ginger, sesame oil, and cornstarch. Mix well to form a marinade. Add the shrimp, season with salt and pepper, and toss until they are fully coated. Set aside for about 10 minutes.

    Prep the Rice: While the shrimp is marinating, prepare the rice according to package instructions if it’s not already cooked.

      Sauté the Veggies: In a large skillet or wok, heat the olive oil over medium heat. Add the bell peppers, broccoli, and snap peas. Season with salt and pepper. Stir-fry for about 4-5 minutes until the veggies are vibrant and slightly tender but still crisp. Remove the veggies from the skillet and set aside.

        Cook the Shrimp: In the same skillet, add the marinated shrimp. Cook for about 3-4 minutes on one side until they turn pink. Flip the shrimp and pour any remaining marinade over them, cooking for an additional 2-3 minutes until the shrimp are fully cooked and tender.
