Slow Cooker BBQ Meatballs

1 pound ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 large egg

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup BBQ sauce (your favorite brand or homemade)

1/4 cup honey

1 tablespoon apple cider vinegar

Optional: sliced green onions and sesame seeds for garnish

Instructions
 

Make the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, salt, and black pepper. Mix everything together until just combined. Be careful not to overmix.

    Form the Meatballs: Scoop out about 1 to 1.5 tablespoons of the mixture and roll it into a ball. Continue forming meatballs until the mixture is used up. You should have about 20-24 meatballs.

      Prepare the Sauce: In a separate bowl, whisk together the BBQ sauce, honey, and apple cider vinegar until smooth. Taste and adjust for seasoning if needed.

        Load the Slow Cooker: Place the meatballs in the bottom of your slow cooker. Pour the BBQ sauce mixture evenly over the top, making sure all the meatballs are coated.

          Slow Cook Them: Cover and cook on low for 6-8 hours or on high for 3-4 hours. The meatballs should be cooked through and very tender by the end of cooking.

            Serve: Once done cooking, carefully stir to coat the meatballs in the sauce again. Serve hot, garnished with sliced green onions and sesame seeds if desired. These can be served as an appetizer or over rice/buns for a main dish.
