1 lb (450g) large shrimp, peeled and deveined

2 tablespoons butter

4 cloves garlic, minced

1 cup bell peppers, chopped (any color)

1 cup zucchini, sliced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

Salt and pepper to taste

Juice of 1 lemon

Fresh parsley, chopped, for garnish

Instructions
 

In a large skillet, melt the butter over medium heat.

    Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.

      Toss in the shrimp and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes, stirring occasionally, until the shrimp turns pink and opaque.

        Add the chopped bell peppers, zucchini, and cherry tomatoes to the skillet. Stir everything together and cook for another 4-5 minutes, until the veggies are tender but still crisp.
