Ingredients

8 cups popped popcorn (about 1 cup unpopped kernels)

1 cup granulated sugar

1/2 cup unsalted butter (1 stick)

1/2 cup light corn syrup

1 tablespoon pumpkin spice blend (or mix of cinnamon, nutmeg, and ginger)

1 teaspoon vanilla extract

1/2 teaspoon salt

1 cup mini marshmallows

1/2 cup candy corn (optional, for festive flair)

Instructions

Prepare the Popcorn: Pop the popcorn using your preferred method (air popper, stovetop, or microwave). Place the popped popcorn in a large mixing bowl, ensuring to remove any unpopped kernels.

Make the Sugar Mixture: In a medium saucepan over medium heat, combine the granulated sugar, butter, and light corn syrup. Stir continuously until the mixture comes to a boil. Allow it to boil without stirring for about 4-5 minutes until it reaches a golden color.

Add Flavorings: Remove the saucepan from heat and carefully stir in the pumpkin spice blend, vanilla extract, and salt. Be cautious, as the mixture will bubble up.

Combine Popcorn and Syrup: Pour the hot syrup mixture over the popped popcorn evenly. Quickly use a spatula or wooden spoon to mix the popcorn and syrup together, ensuring all popcorn is coated well.

Incorporate Add-ins: Once the popcorn is well-coated, fold in the mini marshmallows and candy corn if using. The marshmallows will start to soften as they warm up but should retain some shape.

Shape into Balls: Allow the mixture to cool for a few minutes until it is cool enough to handle (but still warm). Grease your hands with a little butter or cooking spray to prevent sticking, and gather handfuls of the mixture, shaping them into balls about the size of a golf ball.

Let Set: Place the popcorn balls on a baking sheet lined with parchment paper until they cool and set completely. If desired, you can also wrap them in plastic wrap or cellophane for individual treats.

Serve: Once set, enjoy your festive Pumpkin Spice Popcorn Balls! They're perfect for autumn gatherings, Halloween parties, or as a delightful snack any time of year.
