One-Pan Cheesy Pumpkin Spice Ravioli

1 (9 oz) package of fresh or frozen pumpkin spice ravioli

2 cups of vegetable broth

1 cup of heavy cream

1 tablespoon of olive oil

2 cloves of garlic, minced

1 teaspoon of pumpkin spice blend

1 cup of grated Parmesan cheese

1 cup of shredded mozzarella cheese

1/2 cup of fresh spinach

Salt and pepper to taste

Optional: Chopped fresh parsley for garnish

In a large skillet or pan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Pour in the vegetable broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer.

      Add the pumpkin spice blend, stirring well. Season with a pinch of salt and pepper to taste.

        Carefully add the pumpkin spice ravioli to the simmering broth. Cook according to package instructions, usually about 4-5 minutes for fresh ravioli or 6-8 minutes for frozen.

          Once the ravioli are cooked through, gently fold in the fresh spinach, allowing it to wilt for about 1-2 minutes.

            Reduce the heat to low and stir in the grated Parmesan cheese and shredded mozzarella. Continue stirring until the cheese melts and everything is well combined.

              Taste the ravioli mixture and adjust the seasoning with more salt and pepper if needed.

                Serve in bowls, garnishing with chopped fresh parsley if desired. Enjoy your cozy, cheesy meal!
