Minute Slow Cooker Chili Stuffed Sweet Potatoes

4 medium sweet potatoes

1 lb ground turkey (or beef, if preferred)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 cup corn (frozen or canned)

1 medium onion, diced

2 cloves garlic, minced

2 tbsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

Optional toppings: shredded cheese, sour cream, green onions, avocado, cilantro

Instructions
 

Prep the Sweet Potatoes: Wash and scrub the sweet potatoes under running water. Pat them dry, then pierce each sweet potato a few times with a fork to create steam vents.

    Start the Chili: In a slow cooker, add the ground turkey (or beef), black beans, kidney beans, diced tomatoes (with juice), corn, diced onion, minced garlic, chili powder, cumin, and paprika. Season with salt and pepper to taste. Stir everything together until well combined.

      Cook: Cover the slow cooker and set it on low for about 4 hours or on high for about 2 hours, until the meat is cooked through and the flavors meld together beautifully. Stir occasionally if you can!

        Bake the Sweet Potatoes: About 30 minutes before the chili is done, place the sweet potatoes in a microwave-safe dish. Add a bit of water (a few tablespoons) to the dish, cover it with plastic wrap, and microwave on high for 8-10 minutes, or until the sweet potatoes are tender.

          Assemble: Once the sweet potatoes and chili are both ready, carefully slice each sweet potato down the middle. Gently push the ends together to form an opening.

            Stuff Them: Spoon a generous portion of the chili into each sweet potato, letting it overflow a bit for that extra deliciousness.

              Garnish and Serve: Top with your favorite toppings, such as shredded cheese, sour cream, green onions, sliced avocado, or fresh cilantro. Enjoy your cozy meal!
