4 whole wheat tortillas

1 cup scrambled eggs (about 4 large eggs)

1 cup fresh spinach, chopped

1/2 cup bell peppers (red, yellow, or green), diced

1/2 cup cherry tomatoes, quartered

1/4 cup shredded cheddar cheese (or vegan cheese)

1/4 cup black beans, rinsed and drained

1 tablespoon olive oil

1/2 teaspoon paprika

Salt and pepper to taste

Optional: avocado slices or salsa for topping

Instructions
 

Prep the Veggies: Start by washing and chopping all the vegetables. Dice the bell peppers, quarter the cherry tomatoes, and chop the spinach.

    Scramble the Eggs: In a medium bowl, whisk the eggs with a pinch of salt, pepper, and paprika. In a non-stick skillet, heat the olive oil over medium heat. Pour in the egg mixture and scramble until fully cooked (about 2-3 minutes). Remove from heat.

      Sauté the Veggies: In the same skillet, add the chopped spinach and bell peppers. Sauté for 2-3 minutes until the veggies are tender and the spinach has wilted. Stir in the black beans.

        Combine Ingredients: Add the scrambled eggs back into the skillet with the sautéed veggies. Mix well to combine everything evenly. If you're using cheese, stir it in now until melted and mixed.
